Sizzling Through The Season- Week 14 Chimichangas

Welcome to week 14! Your New York Football Giants are about to play a home game as a first place team in the month of December. Its been a very long time since you can say that. Today, the giants are playing once former divisional rivals the Arizona Cardinals who have hit a bit of a cold streak in losing their last four games. This matchup is two teams going in two different directions.

This week, I made everyone’s favorite air fried chicken chimichangas. For those who don’t know know what a chimichanga is, well it’s a burrito that is fried and covered in toppings. Who doesn’t love the sound of that. It’s a pretty simple dish if you ever want to make it yourself especially if you have air fryer it took no time at all. I will be making these more often that’s for damn sure. As always lets keep this winning streak a live and go giants!

Air Fryer Chicken Chimichangas


2cups shredded deli rotisserie chicken

1packet (0.85 oz) Old El Paso™ chicken taco seasoning mix

2 cups of Chicken Broth

1 16-oz can Old El Paso™ traditional refried beans

1 can (4.5 oz) Old El Paso™ chopped green chiles

8 flour tortillas (10 inch)

8oz shredded Cheddar Cheese

Toppings- shredded lettuce, sour cream, guacamole, salsa and more cheese.


In 10-inch nonstick skillet, heat oil over medium heat. Add chicken, taco seasoning mix and chicken broth; stir until well coated. Cook uncovered 4 to 5 minutes, stirring frequently, until chicken is heated through.

In small bowl, stir together beans and chiles. Place tortilla on work surface, and spread about 3 tablespoons of the bean mixture in middle of tortilla. Top with the chicken and the shredded cheese. Fold sides of tortilla in. Fold bottom over filling and sides. Roll tightly to enclose filling. Repeat with remaining tortillas.

Place 2 in basket of air fryer, seam side down. Set to 375°F; cook 4 minutes. Turn; cook 2 to 3 minutes or until lightly browned and heated through. Repeat with remaining 4 filled tortillas.

Top with your favorite toppings like shredded lettuce, sour cream, guacamole, salsa and more cheese.
